Chicken and Veggies
You CAN eat healthy while on vacation. Kept it simple with Chicken Veggie Stir Fry and Brown Rice.
Cook rice right away using rice cooker or on the stove.
Sauté chicken with lemon pepper seasoning in coconut oil.
In separate pan saute veggies with coconut oil when chicken is almost done.
Add 3 tablespoons of a marinade of choose to the chicken. I used teriyaki.
Stir well then add veggies to chicken. Stir some more and serve over rice.
